Decaffeinated coffee is ideal for those who want to enjoy their favourite blends at any time of day, without the effects of caffeine, however the process of removing caffeine from a bean can also remove much of the bean's flavour. That's why the Swiss Water Process is a favourite method of decaffeinating coffee: it doesn't remove the flavour and strength of coffee beans in the act of removing the caffeine, and doesn't use any chemicals. In the method, coffee beans are first soaked in hot water to remove 99.9% of the caffeine. This liquid is then processed through activated charcoal to remove the caffeine, leaving behind the flavoured, caffeine-free liquid. The beans are then soaked in this liquid to absorb the flavour, resulting in a decaffeinated coffee bean that is 100% free of chemicals, and packed full of flavour. Swiss Water Decaf: All Flavour, No Caffeine
For the times you’re in the mood for a delicious coffee but don’t want the buzz of caffeine, decaffeinated coffee is the perfect solution. Unfortunately, many decaf brews lose much of their flavour during processing. In removing the caffeine, many roasters also remove a coffee’s rich, full taste.
Fortunately, one method eliminates caffeine without sacrificing flavour or strength: the Swiss Water Decaffeination Process.
What is Swiss Water Decaffeinated Coffee?
Swiss Water Decaf Coffee is a medium roast Arabica from Brazil that is 99.9 percent caffeine-free and completely chemical-free. This full-bodied coffee has low acidity and minimal bitterness, and many people find it indistinguishable from regular caffeinated coffee.
Because it contains virtually no caffeine, it can be enjoyed at any time of day or night without affecting sleep. It is also suitable for multiple brewing methods, including bean-to-cup, cafetiere, espresso and filter machines.
What is the Swiss Water Process?
The Swiss Water Process was first developed in Switzerland in the 1930s and refined in 1980 by Coffex S.A. It is now one of the most widely used natural decaffeination methods across the world.
This environmentally friendly process is entirely chemical-free and relies on time, temperature and water flow to remove caffeine. It is a long procedure that can take up to ten hours and requires precise control at every stage.
The process begins with small batches of high-quality green coffee beans being thoroughly cleaned. The beans are soaked in hot water, allowing caffeine and other soluble compounds to transfer from the beans into the water. These beans are then removed and discarded.
The water, now containing caffeine, is passed through carbon filters that remove the caffeine while retaining the flavour compounds. This creates a liquid known as Green Coffee Extract. A new batch of beans is then soaked in this extract; caffeine diffuses from the new beans into the extract, but the flavour components remain, as both contain the same concentration of flavour compounds.
This process is repeated until 99.9 percent of caffeine has been removed. The Green Coffee Extract is reused several times before the beans are dried, bagged and prepared for export.
