Experience Matcha With These Three Delicious Recipes

Revealing a delightful nutty sweetness, grassy notes and the fresh flavour of green tea, matcha is a green tea powder from Japan that is rich in antioxidants.

The characteristic vibrant green colour, energising properties and complex flavours of matcha make it a favourite of tea-lovers around the world, and as it is a very versatile flavour it can be enjoyed as a tea, added to smoothies and shakes or even used as an ingredient in sweet and savoury dishes.

Matcha Latte

A delicious alternative to your usual caffeinated coffee, matcha lattes are creamy, indulgent and easy to prepare. You can use your preferred type of milk when preparing, whether that’s dairy or a dairy-free milk such as almond, coconut or oat milk.

Ingredients:
• 1 tsp matcha powder
• 250ml milk (dairy or non-dairy alternative) 
• 1 tsp honey

Step 1
Create the matcha paste by adding the matcha powder, honey and a teaspoon of boiled water into a cup, then mix until it forms a paste.

Step 2
Heat the milk in a saucepan until it is hot, being careful not to overheat or burn it. If you want to create a frothy drink, add the milk to a frother or whisk until thickened.

Step 3
Carefully pour the hot or frothed milk onto the matcha paste and enjoy!


Matcha Loaf Cake

Ingredients:
• 1 ½ tsp matcha powder
• 225g unsalted butter
• 225g golden caster sugar
• 225g self-raising flour
• 4 eggs

Step 1
Heat the oven to 180°C (fan oven) and line a baking tin with grease-proof paper.

Step 2
Mix together the butter and sugar until creamy.

Step 3
Add one egg at a time and mix until combined with the butter and sugar. Sift in the flour and the matcha powder and combine to make a smooth mixture.

Step 4
Pour the mixture into the baking tin and bake for around 45 minutes.

Step 5
Leave to cool before dusting with icing sugar.


Matcha Pancakes

Ingredients (makes six small pancakes):
2 tsp matcha powder
• 125g plain flour 
• 2 tsp baking powder  
• 3 tbsp caster sugar 
• Pinch sea salt
• 150ml milk
• ¼ tsp vanilla extract 

Step 1
Put the matcha powder, flour, baking powder, sugar and salt into a bowl and mix together well. Gradually pour in the milk and vanilla extract, while whisking until smooth.

Step 2
Place a large non-stick frying pan over a medium heat, add a little oil and wipe around the pan with a piece of kitchen paper. Once the pan is hot, pour a small ladleful of the batter onto one side of the pan and spread with the back of a spoon until about 10cm in diameter, then repeat to make a second pancake on the other side of the pan.

Step 3
Cook for about a minute or until one or two bubbles appear on the surface of the pancake, then carefully flip the pancakes over and cook on the other side for a further minute. Once the pancakes are light, fluffy and a pale golden brown in colour, remove from the pan and repeat the process, two pancakes at a time, with the remaining batter.
